I scream, you scream, we all scream for (healthy) ice cream. Today the sun came out to play and everyone knows that you can’t have sunshine without ice cream. After having a rather indulgent week (I’m talking pizza, mexican and cake galore) I wanted to devour something delicious and healthy. I’m guessing you’ve already heard of vegan ice cream aka nana ice cream aka nice cream. For an ice cream with so many names, it’s surprisingly simple to make. Not to mention how amazingly healthy it is, meaning you can spend those sunny days indulging in ice cream to your heart’s content.

Sunday’s are made for kicking back and relaxing. After an early morning gym session and dash into town, I returned home to enjoy the sunshine. With a strong craving for ice cream, I opted for a healthy homemade matcha nice cream. Made from a super team of banana, matcha, dates and almond milk, you can bet that this is one ice cream you will not be feeling guilty for devouring in 0.2 seconds.

Ingredients:
2 ripe bananas (sliced and frozen)
A splash of almond milk
1 scoop matcha green tea
2 dates (optional)
1 scoop vanilla protein powder (optional)

Directions:
Making this delicious and antioxidant rich nice cream couldn’t be easier. Simply add all the ingredients to the blender and whizz away until it’s all mixed up into a fluffy ice-cream texture. Once done, transfer the mix to a freezer-safe container and pop it in the freezer until you’ve got your perfect frozen ice cream. It should only take a couple of hours. I was, as always, way too excited to tuck in. So after an hour, I was running to the freezer to dive straight into a jar of guilt-free nice cream. I teamed my matcha nice cream with some original nice cream (all you need is the bananas and almond milk!), chopped up strawberries and a drizzle of sweet freedom choc shots. Honestly, I was in nice cream heaven. It was the perfect pairing for a lazy Sunday catching those ever so rare sunrays.

You probably noticed that I marked a couple of the ingredients up as optional. The reason I add dates is mainly because of my major sweet tooth. Dates are a healthy way to add a sweet kick to your recipes. Without the dates this nice cream is already pretty sweet tasting but I did say I have a sweet tooth! So I’m always happy for any extra sweetness. Not to mention, they’re good for you too! But if you don’t fancy dates, then simply leave them out. As for the protein powder, again it’s optional. If you’ve read my previous recipe posts, you’ll know that I’m a sucker for protein. It’s an essential part of my diet and necessary for muscle recovery (any excuse to gorge on my protein pb and nutella brownies). But, if you’re already getting enough protein in your diet then feel free to skip this out as well. Just remember, you may need to either reduce the amount of almond milk you add to get the perfect consistency.

Seriously, is there is one recipe you need this summer. It’s this one. Nice cream is so versatile. Just replace that matcha with whatever takes your fancy: fruit, nut butter, healthy cookie dough, anything! Oh and it definitely doesn’t have to be sunny to enjoy this tasty dessert. Dive straight in to a jar of this creamy goodness whenever you’re in need of a sweet fix.
